Easy, Authentic Thai Soup: Tom Kha

1 pot, 2 step recipe for lip licking Tom Kha: Authentic Thai Soup which is Coconut Milk based and naturally Vegetarian/Vegan. Sure to impress yourself and any guest(s) you may have over for dinner! Serves 4 hearty bowls of soup.


Authentic Thai Soup

  • 2 Tbsp Extra Virgin Olive Oil

  • 1/2 Onion Chopped (white or yellow)

  • 3 cloves garlic, minced

  • 2 cups Thick sliced mushrooms

  • 2 Tbsp Coconut Aminos

  • 1 Tsp Minced Ginger

  • 1 Tsp Sugar

  • 1/4 tsp Cayenne Pepper

  • 1/4 tsp Chili Powder

  • 1 Tbsp Tomato Paste Concentrate

  • 1 1/2 Tsp Salt

  • 1/2 Tsp Pepper

  • Zest from one Lemon

  • 1 Tbsp fresh squeezed lemon juice

  • 3 cups Vegetable stock

  • 2 cans full-fat Coconut Milk (13.5oz each)

  • 1 block Extra Firm Tofu, cubed

  • 1 Tomato, cubed

  • 1 cup chopped Green Cabbage

  • 1/2 stick Lemongrass, halved (remove from soup before serving)


Toppings

  • Lime Wedges

  • Sliced Green Onions

  • Fresh Chopped Cilantro

  • Sriracha, if you want to kick it up a notch


Grab a large pot and place it on your stovetop, kick up the burner to medium-high heat. Once it gets hot, pour in the olive oil, onions, garlic and mushrooms. Cook for 4-5 minutes, stirring regularly.

Now that your mushrooms are starting to brown, you're going to throw everything else into the pot. Coconut Aminos, ginger, sugar, cayenne, chili flakes, tomato paste, salt, pepper, zest, lemon juice, coconut milk, veggie broth, tofu, tomato cabbage and lemongrass!

Bring it to a beautiful boil, then reduce to a simmer and let her cook for 20-25 minutes. Serve straight up in a bowl or with some rice or noodles, chef's choice. Either way, be sure to top with the fresh cilantro, green onions and lime juice. It's perfection!
